Chicken Stir Fry (WW)

Ingredients
Cooking Spray
2 clove Garlic (minced)
1 pound Chicken (breasts; cut into strips)
4 Green Onions
4 cup Stir Fry Vegetables (frozen; without sauce)
1/2 cup Chicken Broth
1/4 cup Teriyaki Sauce (light)
Salt (to taste)
Pepper (to taste)
2 cup Minute Rice (Prepared)
Directions
Spray large non-stick skillet with cooking spray; heat.
Add garlic and cook 1 minute.
Add chicken; cook over medium heat, stirring constantly until golden brown on all sides; about 5 minutes.
Add scallions and vegetables.
Stir-fry until barely tender, about 2-3 minutes.
Add broth, teriyaki sauce, salt, and pepper.
Stir-fry until chicken is cooked through, vegetables are tender-crisp, and sauce reduces slightly; about 3-5 minutes.
Prepare minute rice according to the package directions; and serve chicken stir fry over rice.

I like this recipe. Is has very good flavor, and is easily adaptable to whatever you have in the house. I have made it with just broccoli, or other mixed vegetables when I don't have stir-fry veggies in the house. And I often use regular onions instead of green onions.
This recipe isn't very exciting, or outstandingly memorable. But it is a delicious and easy go to recipe when you've had a long day, but don't want to go out. It quickly became comfort food in my household. And made right, it can be on the table in just 15 minutes!!!
