Crockpot Fiesta Chicken (WW)
Adapted From: Weight Watchers
Ingredients
1 bag Chicken (bonesless, skinless breasts)
1 can Pinto Beans (large)
1 can Rotel Tomatoes (large)
1 can Tomato Sauce (small)
1 package Taco Seasoning
1 cup Minute Rice
Directions
Add all ingredients to crockpot except rice. (Chicken can still be frozen!)
Cook low all day.
About 1 hour before dinner time, put rice in crock pot.

This is a quick fix to a mexcian craving. It has very good flavor for being so simple! How can it get easier?
You can eat this 3 different ways as well:
1. Eat it as a whole chicken breast at the end of the day. The chicken almost falls apart.
2. If you stir a few times in the last hour, the chicken will actually shred very easily to eat casserole style (as pictured).
3. Once shredded, it is very good served on a tortilla like a chicken taco.
