Everything Chicken Stuffed with Scallion Cream Che

Ingredients
Cooking Spray
3 ounce Cream Cheese (reduced fat)
.25 cup Green Onions
2 Tbs Grape Tomatoes
24 ounce Chicken (4-6oz breasts)
3 Tbs Everything Bagel Seasoning
Directions
- Preheat over to 375 F. Line a sheet pan with foil; coat the foil with cooking spray.
- Chop scallions. Finely chop grape tomatoes
- Place cream cheese in a small bowl; stir in scallions and tomatoes
- Using sharp paring knife, cut a horizontal slit through the thickest part of each chicken breast to form a pocket, cutting almost to but not through the other side. Divide the cheese mixture evenly among the chicken, stuffing into each pocket.
- Spread the everything bagel seasoning blend on a plate. Lightly coat the top of each chicken breast with cooking spray. Dredge the top of each breast in the seasoning, pressing to adhere.
- arrange chicken on the prepared pan, seasoning size up. Bake until chicken is cooked through and registers 165 F; about 25-30 minutes.
