Classic Shepherd's Pie (WW)
Adapted From: Weight Watchers
Ingredients
2 Potatoes (large; peeled and cut into large cubes)
1/4 cup Sour Cream (fat free)
1 Tbs Margarine
1/8 tsp Salt
2 tsp Olive Oil
1 cup Onion (chopped)
2 Carrots (diced; or about 1 cup)
2 stalk Celery (diced, or about 1 cup)
1 pound Ground Turkey
3 Tbs Flour
1 tsp Rosemary (dried; 1 Tbs fresh)
1 tsp Thyme
1/2 tsp Salt
1/4 tsp Pepper
2 cup Chicken Broth (or beef broth)
Directions
Preheat oven to 400°
Place potatoes in a large sauce pan; add enough water to cover.
Set pan over high heat and bring to a boil.
Reduce heat to medium and simmer until potatoes are tender, about 10 mintues.
Drain potatoes and transfer to a large bowl.
Add sour cream and margarine
Mash until smooth (I use a potatoe ricer, but you could use a manual masher, or a mixer).
Season to taste with salt and set aside.
Heat oil in large skiller over medium heat.
Add onions, carrotes, and celery.
Cook until soft, about 3 minutes.
Add turkey and cook until browned, breaking up the meat as it cooks, about 5 minutes.
Add flour, rosemary, thyme, salt, and pepper.
Stir to coat.
Add broth and simmer until mixture thickens; about 3 minutes.
Transfer turkey mixture into a 9" deep dish pie plate (or 9" casserole dish).
Spread mashed potatoes over top using the back of a spoon.
Bake until potatoes are golden; about 30 minutes.

This is an awesome healthy dinner option! Not only is the flavor of the sauce excellent, but it is also very filling. Although...that doesn't stop my husband from getting seconds! I highly recommend giving this a try.
I often change it up with beef or ground chicken instead of the turkey, or by adding other veggies I have in the house (peppers, broccoli, etc.)
