Potatoes Au Gratin

Ingredients
2 1/2 pound Potatoes (about 6)
1/4 cup Butter
1 Onion (small; chopped)
1/4 cup Flour
1 tsp Salt
2 1/2 cup Milk
1 3/4 cup Cheddar Cheese (shredded)
1/2 tsp Dijon Mustard
1/4 cup Parmesan Cheese (grated)
Directions
Boil whole potatoes for 20 minutes, or until just tender.
Drain.
Cover with cold water; cool.
Preheat oven to 375°.
Melt butter in medium saucepan on medium heat.
Add onions; cook and stir for 2 minutes.
Whisk in flour and salt; cook 1 minute.
Gradually stir in milk; cook 5 minutes or until thickened, stirring constantly.
Add 1 1/4 cups cheddar; cook and stir for 1 minute or until melted.
Stir in mustard.
Peel potatoes.
Cut into 1/4 inch thick slices
Layer Potatoes alteratively with cheese sauce in a 2 quart casserole, ending with sauce.
Bake 25-30 minutes at 375°, or until heated through.
Top with remaining cheeses; bake 5 minutes or until melted

I was not a huge fan of this. It looked perfect and delicious coming out of the oven. My mouth was watering. But upon my first bite, it was clearly lacking. I felt like it needed WAY more seasoning and flavor. It was quite bland and boring. If you want to try, I would recommend adding extra salt, maybe some more onions or garlic, definitely some pepper, and whatever else sounds good.
