Apple Enchilada Dessert

Ingredients
1 can Apple Pie Filling (21 ounce)
6 Tortilla Shell (flour; 8 inch)
1 tsp Cinnamon
1/3 cup Margarine
1/2 cup Sugar
1/2 cup Brown Sugar (packed)
1/2 cup Water
Directions
- Preheat oven to 350 degrees.
- Spoon fruit evenly into all tortillas.
- Sprinkle with cinnamon.
- Roll up tortillas and place seam side down on a lightly greased 8x8 baking pan.
- Bring margarine, sugars, and water to a boil in a medium saucepan.
- Reduce heat and simmer, stirring constantly for 3 minutes.
- Pour sauce evenly over tortillas.
- Sprinkly with extra sinnamon on top if desired.
- Bake at 350 degrees for 20 minutes.

This recipe taught me a great method of cooking a simple fruit dessert. However, I wasn't overly impressed with the flavors. I loved the shell and the sauce with the ice cream. However, the insides of the enchilada were not terrific.
If I made this again, I would use fresh apples instead; heating them for a few minutes in the microwave with cinnamon. I think having fresh, slightly crisp apples could make all the difference on this one!
