Grilled Pork Chops with Garlic Lime Sauce

Ingredients
6 Pork Chops (Preferrably boneless; 1/2-inch thick)
1/4 cup Lime (preferrably fresh)
1 clove Garlic (minced)
1/4 tsp Red Pepper Flakes (dried)
1/3 cup Olive Oil
2 Tbs Cilantro (fresh, chopped)
1/4 tsp Salt
Directions
Whisk together lime juice, garlic, red-pepper flakes, and salt.
Add oil in a slow stream, whisking well.
Whisk in Cilantro.
Prepare a gas grill for direct-heat cooling over medium-high heat.
Pat pork dry and season with salt and pepper.
Oil grill rack.
Grill pork chops, covered, turning over once, until just cooked through (5-6 minutes).
Served grilled pork chops, drizzled with some vinaigrette, and with remainder on the side.

Oh my! Pork is one of my favorite dinner meats, sometimes even preferrable to Steak in my mind. And the vinaigrette from this recipe is just amazing! I would serve this over steak, chicken, grilled potatoes, or just about anyhting. I couldn't stop adding more!!
