Fruit Pizza

Ingredients
1/2 cup Butter
1/2 cup Shortening
1 cup Sugar
1 Egg
1 tsp Vanilla
2 cup Flour
1/2 tsp Cream of Tarter
1/2 tsp Baking Soda
1/4 tsp Salt
16 ounce Cream Cheese
16 ounce Cool Whip
1 cup Powdered Sugar
Strawberries
Raspberries
Banana (Or whatever other fruit you prefer...)
1 cup Pineapple Juice
1 cup Orange Juice
2 Tbs Cornstarch
Directions
Preheat oven to 350°
Cream together butter, shortening, and sugar.
Add egg and vanilla.
Add flour, cream of tarter, baking soda, and salt.
Mix well.
Put half of dough on pizza pan, and roll out.
Repeat iwth remaining dough.
Bake at 350 for 8-10 minutes or until golden around the edges.
Cool.
Mix cream cheese and powdered sugar.
Add cool whip.
Spread mixture on top of cooled crusts.
Top with assorted fruit (fresh or canned, whatever you like best).
In a sauce pan over medium heat, combine juices and cornstarch.
Cook until thickened.
Spoon over fruit while hot.
Cool before serving.
NOTE: This yeilds 2 pizzas!

This is great for a summer picnic. I made the one in the picture for a forth of July party and it was a big hit.
This pretty turns out like a giant sugar cookie with a very light, not overwhelming cool-whip frosting. The sweetness of your favorite fruit stands out over the subtlety of the other flavors.
