Minestrone (WW)

Ingredients
Cooking Spray
1 Onion (chopped)
2 Celery (ribs; chopped)
1 1/2 Carrots (chopped)
8 ounce Rutabagas (raw; chopped)
3 1/2 cup Vegetable Broth
14 ounce Diced Tomatoes (canned)
2 tsp Oregano (or combination of Italian herbs)
1 ounce Pasta (whole-wheat; shells or other small shape)
1/8 tsp Salt
1/8 tsp Pepper
1 Tbs Parsley
Directions
Coat a large saucepan with cooking spray and heat over medium-high heat.
Add onion, celery, carrots, and rutabaga.
Cook about 3 minutes, until vegetables begin to soften.
Pour in vegetable broth.
Add tomatoes and oregano.
Bring to a boil, reduce heat, cover and simmer over a very low heat for about 15 minutes.
Add pasta to saucepan.
Cook until pasta is tender, about 10 minutes more.
Taste soup and season to taste as necessary.
Garnish with parsley when serving.
