Penne with Vodka Sauce (WW)

Ingredients
1 Tbs Butter
2 Shallot (minced)
2 clove Garlic (minced)
2 Tbs Parsley (fresh; minced)
1/2 tsp Salt
1/4 tsp Pepper
3 Tbs Tomato Paste
2 ounce Vodka
1/8 tsp Salt
12 ounce Pasta (penne)
1/2 cup Heavy Cream
1/2 cup Basil (fresh; cut into ribbons)
Directions
Bring a medium pot of salted water to a boil.
Cook pasta according to package directions; drain.
Meanwhile, heat a large skillet over medium-low heat.
Add butter, shallots, and garlic; saute until shallots start to caramelize, about 3-5 minutes.
Add parsley, salt, pepper, stirring onces or twice.
Add tomato paste and mix to form a paste.
Cook for about 5 minutes, moving paste around pan occasionally.
Add vodka.
Scrape bottom of pan with a wooden spoon and cook for about 5 minutes more.
Add cream to tomato sauce; reduce heat to low and simmer for about 3 minutes.
Add pasta to sauce and mix to coat.
Top with basil and season to taste with salt and pepper.

Love this!! I'm not a big pasta person, but this is fabulous...espcially considering it is a healthier option. It can be a little light on the sauce; so maybe cook a few less noodles or bump up the sauce by 1/3 or 1/2.
If you're like my husband and think meat is necessary to make a meal; try the Itailian Style meatballs with this. Its a great combo.
