Baked Penne Ragu (WW)

Ingredients
1 pound Ground Beef (lean; or lean ground turkey per preference)
2 Onion (diced)
8 ounce Mushrooms (I typically use cremini; but any work)
1 Tbs Salt
1 Tbs Garlic (minced)
1 pinch Red Pepper Flakes
12 ounce Roasted Red Peppers (packed in water; chopped)
1 can Diced Tomatoes (15 ounces)
30 ounce Tomato Sauce (cans)
1 Tbs Italian Seasonings
.5 cup Basil (fresh; minced)
12 ounce Pasta (whole wheat; penne or preference)
1 cup Mozzarella Cheese (part-skim)
.25 cup Parmesan Cheese
1 tsp Olive Oil

Directions
- Preheat oven to 350. Coat a large 3 quart casserole dish with cooking spray.
- Bring a pot of water (with salt if preferred) to a boil. Add pasta. Cook to package directions. Drain.
- Meanwhile, heal oil in very large non-stick skillet over medium-high heat. Add turkey or beef, onions, and mushrooms. Cook, stirring often, until liquid has evaporated and meat is cooked through; about 10 minutes.
- Add salt, garlic, red pepper flakes, roasted red peppers, diced tomatoes, tomato sauce, italian seasoning and basil; stir to mix and coat.
- Reduce heat to medium-low and simmer for 10 minutes so flavors blend.
- Stir in cooked pasta, 1/2 cup mozzarella and 2 Tbs parmesan.
- Transfer mixture to prepared dish; sprinkle with remaining 1/2 mozzarella and 2 Tbs Parmesan.
- Bake until cheese is bubbly and melted and dishes and heated through, about 25-30 minutes
- Garnish with fresh basil if desired.
About 1 cup per serving ; 10 servings in total

OMG. So good. I'm not a spice person and my husband is. He loves the hint of spice in this and it isn't too over-powering for me. My 8 year old looked at one night and was like "why do you get pasta" and I was like "do you want to try it????". He totally tried it; mushrooms, onions, peppers and all...and LOVED IT. He asks for it and eats it every time I make it. And its healthy. Wow. Major winner in our house!
