Broccoli and Cheese Casserole

Ingredients
3-4 package Broccoli (Frozen)
1 pound Velveeta (Slightly melted)
1/2 box Crackers (Ritz or Townhouse)
1 stick Butter
Directions
Preheat oven to 350°
Blanch broccoli by placing into boiling water for a few minutes. Do not fully cook.
Remove broccoli from water and place in a greased lasagna pan.
Pour Velveta over broccoli.
Place crackers in a large ziplock bag and roll with a rolling pin until crushed.
Mix crushed crackers and melted butter.
Sprinkle cracker mixture over broccoli and cheese.
Bake at 350° for 30 minutes.
Serve immediately.

One of my favorite go-to vegetable side dishes for company. Obviously its not super healthy, but I just don't care. This is so worth it!
If you like this, but it is a little too cheesy, try Broccoli Rice Casserole. It is very similar, with a toned down cheese flavor. I will sometimes make that recipe, but add the crumb topping from this recipe to get the best of both worlds!
