One-Pan Lemony Pasta with Sausage & Broccoli (WW)

Ingredients

Cooking Spray

1 pound Turkey Sausage (Spicy variety, casing removed)

1 Onion (diced)

.5 tsp Salt

3 clove Garlic

.125 tsp Red Pepper Flakes

4 cup Chicken Broth

8 ounce Pasta (Orecchiette or preference)

2 cup Broccoli (Chopped small)

.25 cup Parmesan Cheese (divided)

1 Tbs Lemon Zest

2 Tbs Lemon Juice

.33 cup Basil (fresh; chopped)


Directions

  • Coat a large nonstick pan with cooking spray; heat over medium-high heat.  Add sausage and cook, stirring often and breaking apart sausage, until well browned.  ~8 minutes.  Remove sausage to a bowl.
  • Add onion and salt; cook, stirring often, until onion is softened, ~5-8 minutes.  
  • Add garlic and hot pepper flakes; cook, stirring, ~1 minute.  
  • Add broth; bring to a boil over high heat.
  • Add pasta; cook, stirring frequently, about 8 minutes.  
  • Add broccoli; cook stirring occasionally, until pasta is al dente, about 4 minutes more.
  • Stir in cooked sausage, 3 Tbs Parmesan, lemon zest, lemon juice, and tomatoes; about 2 minutes.  
  • Off-heat.  Add in basil and remaining 1 Tbs parmesan

Serving size: 1.5 cups; total servings: 6

I a not a pasta person generally.  But this one had my heart from the first time I made it.  It has a freshness for a pasta you don't often get, but the sauce is still thick and flavorful.  So delicious!!
