Katie Dishes - Two Thumbs WAY Up!
This is one of my all time favorite recipes. It is a classic that almost everyone has had, but for some reason, it always tastes so delicious. I honestly believe that everytime you are staring at the cupboard wondering what it is you are craving, you are craving homemade chex mix.
My secret to this recipe is "overpouring" all seasonings and adding an extra tsp of worcestershire sauce. Friends like my version so much that I am honestly not allowed to attend Thanksgiving without it. Each year I up the recipe: a double batch, 2.5 batches, triple batch...and each year it is empty faster. 3 batches for only 5 people finished in less than 4 days...that's almost as impressive as finishing a keg in 24 hours. And one of those 5 doesn't even eat it! (Stupid Kevin).
Here are a few suggestions to spice it up and/or improve on your version:
My mother-in-law adds whatever is left-over around the house: cheez-it's, bugles, crispex, etc. If you are looking to change it up a bit, they add a slightly different flavor and texture. I definitely endorse this kind of experimentation!
I prefer using all Cashews. However, cashews can be expensive. Try mixed nuts, peanuts, or even eliminate the nuts completely (for those that are allergic).
I use thin pretzel sticks (as opposed to pretzel knots). Pretzel knots can get a little dense. Sticks are a little "lighter" like the rest of the ingredients.
Overdose whatever ingredients you like best. Some people like the corn chex best, or the cheerios. Adapt the recipe accordingly. I once made a version with almost NO chex, and 5 or 6 cups of cheerios!
Moral of the story, play around with what you like. Just be careful not to add or increase one ingredient without reducing another. It is important to keep the ratio of dry ingredients to seasoning equivalent to the original recipe. (E.g. if you want to add 1 cup of cheese-its, make sure you reduce another ingredient by 1 cup as well).
