Chicken and Broccoli Rice

Ingredients

Chicken and Broccoli Rice

1/2 cup Onion (Chopped)

1/2 cup Mushrooms (Sliced)

1 Tbs Butter

2 cup Rice (Cooked to pkg directions)

2 cup Chicken (Breast - cooked and cubed)

2 cup Broccoli (or 10 oz pkg frozen broccoli)

2 can Cream of Mushroom Soup

1 can Water Chestnuts (Optional)

1/2 cup Cheddar Cheese (Shredded)


Directions

Preheat oven to 350°.
Grease 1 1/2 quart baking dish.
Simmer onions and mushrooms in butter until tender.
Stir in rice, chicken, broccoli, soup and water chestnuts.
Pour into a greased baking dish.
Top with shredded cheddar cheese.
Bake at 350° for 20-25 minutes.


Katie Dishes - So-So

My husband really enjoys this, but to me it is just average. This is a typical casserole. Nothing spectacular, but it's an easy recipe when you don't have a lot of inspiration or when there isn't much in the house.

I found the sauce to be a bit blah. I always add at least a tsp garlic salt, and a dash of pepper. I have tried adding some sour cream in place of some of the soup which was ok, but still just average. Let me know if you find a way to make it outstanding...
