Lightened Up Beef Stroganoff

Ingredients
1 pound Ground Beef (96% lean ground beef; or delicious with 94% lean turkey as well)
1 Onion (diced)
12 ounce Mushrooms (diced or sliced according to preference)
1 Tbs Cornstarch
.25 cup Water (cold)
1 Tbs Worcestershire
1 tsp Garlic Powder
1 tsp Salt
.5 tsp Pepper
1 can Cream of Mushroom Soup (10 oz.; 98% fat free)
8 ounce Egg Noodles
1 cup Plain Yogurt (fat free; or substitute light sour cream)
Directions
- Bring a pot of water (with salt if desired) to a boil. Add noodles and cook accordingly to package directions. When done, drain.
- While noodles cook, brown beef (or turkey) with onion and mushrooms in a skillet until meat is done and onion is transparent. Drain Grease.
- Dissolve corn starch in cold water. Pour corn starch mixture into meat. Stir in garlic powder, Worcestershire, salt & pepper, and 1 can of cream of mushroom soup. Cook for ~5 minutes, stirring constantly.
- Remove meat mixture from heat and stir in greek yogurt; mix well.
- Add noodles and mix till well blended

For a low cal alternative, I really like this. Very veggie forward; flavor is there; and I don't feel like it is lacking in noodles even though there is less. I use ground turkey a lot and it doesn't feel like i'm missing anything with substituting for the beef! Definitely a recipe that quickly got into our rotation!
