Peanut Butter Cookies
Adapted From: Antioch Community HS
Ingredients
3/4 cup Butter
3/4 cup Shortening
1 1/2 cup Sugar
1 1/2 cup Brown Sugar
1 1/4 tsp Vanilla
3 Egg (Beaten)
1 1/4 cup Peanut Butter
3 cup Flour
1 1/4 tsp Baking Soda
1 tsp Salt
Directions
Preheat oven to 350°.
Cream shortening and butter with sugar until light and fluffy. Mixture should not be granular.
Add vanilla and blend thoroughly.
Add beaten eggs and peanut butter to mixture. Mix thoroughly.
Mix dry ingredients. Add to above mixture.
Form balls and place on ungreased baking sheet.
With salad fork dipped in flour, press each ball in both perpendicular directions (X).
Bake at 350° degrees for 8 minutes.
Allow to cook on the cookie sheet for a few minutes.
Remove and cool completely on wire racks.
Yield: 7-8 dozen
