Potato Casserole
Adapted From: Aunt Karen
Ingredients
6 Potatoes (Large)
1 tsp Salt
2 Tbs Butter
4 ounce Sour Cream
Milk (as needed)
1/8 tsp Garlic Powder
6 slice Bacon (fried crisp and crumbled)
1/2 cup Cheddar Cheese (grated/shredded)
Directions
Peel and cube potatoes.
Boil potatoes until fork tender. Drain.
Salt potatoes and mash with sour cream, butter and milk as needed. (I use a potatoe ricer, but a mixer or old school potato masher works just as well)
Sprinkle mashed potatoes with garlic powder.
Stir in bacon.
Place mixture in a buttered casserole dish.
Top with grated cheese.
Bake at 300° until cheese melts.
If making ahead:
This casserole can be made up earlier in the day or the day before and refrigerated. To make after refrigeration, bake covered at 350° for 30 minutes.
Remove cover and bake an additional 15 minutes or until cheese is melted.

This is a terrific side dish option! Just a little twist to normal mashed potatoes, but so much more flavorful. Who doesn't love bacon?
I often make this ahead of time when I'm having company, and guests give it gets great reviews!
