One Pan Mexican Skillet (WW)

Ingredients
1 Tbs Olive Oil
1 Tbs Garlic (minced)
.5 Onion (diced)
2 Green Pepper (or other color of your liking; diced)
1 pound Ground Beef
3 Tbs Taco Seasoning
.5 cup Tomato Sauce
2 Tbs Green Chilies (canned)
15 ounce Black Beans (canned; drained and rinsed)
1 cup Rice (quick cooking)
1.5 cup Beef Broth
.5 cup Cheddar Cheese (shredded)
Directions
- In a large non-stick skillet, heat at olive oil over medium-high heat.
- Add beef, garlic, onion, bell pepper and sauté until veggies are tender and beef is cooked through.
- Add taco seasoning, tomato sauce, green chiles, and black beans; cook for a few minutes to bring flavors together.
- Add in quick-cooking brown rice and broth. Bring to a boil over medium-high heat.
- Once boiling, turn down to low and cover. Let simmer for about 20 minutes or until the rice has absorbed the majority of the liquid.
- Sprinkle cheese on top of skillet and let melt
