One Pan Mexican Tortilla Skillet (WW)

Ingredients
Cooking Spray
1 pound Ground Turkey (99% lean; or 94% lean ground beef based on your preference)
.5 Green Pepper
.5 Onion
2 Tbs Worcestershire
6 Flour Tortilla
1 can Tomato Soup (10.75 oz)
.5 cup Salsa
.25 cup Water
.3 cup Cheddar Cheese (shredded; reduced fat if preferred)
Directions
- Spray a large stir fry skillet with cooking spray and set to medium heat. Cook ground beef/turkey along with onions and peppers in the skillet and crumble meat as it cooks.
- Add Worcestershire and cook it into the ground meet mixture
- Meanwhile, using a pizza cutter or large knife, stack tortillas on top of each other and cut the tortillas into 1-inch strips. Rotate cutting board and cut tortillas the opposite direction, so you end up with 1-inch squares.
- Add tomato soup, salsa, and water into the meat mixture when fully cooked.
- Add tortilla squares into the pan; mix well. Cook ~ 5 more minutes over medium heat
- Add cheese on top and let cook until cheese melts

I really like this. Tortillas end up almost tasting like pasta noodles in the casserole like dish. Flavors are strong; although I do sometimes add in cumin, chili powder, garlic salt, and red pepper flakes to taste if I feel like it is lacking. But the general structure of the meal is a great basis to make adjustments along the way.
