Meat Loaf Muffins (WW)
Adapted From: Weight Watchers
Ingredients
1 pound Ground Beef (or Turkey)
1 package Stove Top Stuffing Mix
1 Onion (medium; chopped)
1/2 cup Green Pepper (chopped)
1 tsp Garlic Powder
2 Egg Whites
1 cup Water
1 package Onion Soup Mix
1 Tbs Worcestershire
1 tsp Dry Mustard
2-3 Tbs Ketchup
Directions
Preheat oven to 350°.
Mix Stove Top and water in a large bowl; stir with fork until moistened.
In another bowl, combine all remaining ingredients except the ketchup.
Add stuffing to mixture; mix with you hands.
Fill sprayed muffin tins almost to top with mixture.
Bake at 350° for 30-35 minutes.
Yield: 6 servings, 2 muffins per serving
NOTE: 1/2 cup egg beaters can be substited for the 2 egg whites

I love this recipe. My version differs from the original recipe a bit to add some more of the seasonings in my mom's classic Meatloaf recipe. But I love all the added veggies in this! And the stuffing in place of your typical breadcrumbs adds some additional flavor, and makes it a little less dense.
I also love the fact that it is cooked in muffin tins. It is super creative and cute: built in portion control! Obvioulsy, if you'd prefer, it could be cooked in a normal loaf pan. If doing that, just increase the cooking time to an hour to accomodate.
